Ceviche
Tuesday, May 13, 2008 at 09:14AM Yesterday I started my day early and got to the Market before it got very busy and the produce was so fresh! I couldn't resist buying some fresh salmon and thankfully so; it was such a beautiful hot day out yesterday that it couldn't really be more perfect for ceviche! Ceviche is quite simple, no cooking required, and quite healthy. Here's what I put in mine:
- a few fillets of the freshest skinless boneless Raw Salmon, Cubed
- 1 tomato
- half a cucumber
- 1 carrot
- 1/4 of an onion
- 1 clove of garlic
- about a Tablespoon of fresh chopped ginger
- about a Tablespoon of miso
- a big bunch of cilantro chopped
- the squeezed juice and zest from about 2 lemons and 1 lime
- some pepper and a little sea salt
