Ceviche

Yesterday I started my day early and got to the Market before it got very busy and the produce was so fresh! I couldn't resist buying some fresh salmon and thankfully so; it was such a beautiful hot day out yesterday that it couldn't really be more perfect for ceviche! Ceviche is quite simple, no cooking required, and quite healthy. Here's what I put in mine:

  • a few fillets of the freshest skinless boneless Raw Salmon, Cubed
  • 1 tomato
  • half a cucumber
  • 1 carrot
  • 1/4 of an onion
  • 1 clove of garlic
  • about a Tablespoon of fresh chopped ginger
  • about a Tablespoon of miso
  • a big bunch of cilantro chopped
  • the squeezed juice and zest from about 2 lemons and 1 lime
  • some pepper and a little sea salt
Mix it all up and then put it all in a zip lock bag or cover tightly with plastic wrap. stick it in the fridge for about 3 hours to let it "cook" in the acidic juices (maybe give it a stir around once or twice during marination) and that is it! I served mine over basmati rice cooked with saffron strands. Delicious!
